Pistachio Oil-Spiced Chickpea Salad Recipe

Ingredients
- 2 cups cooked chickpeas (rinsed and drained if using tinned)
- 1/4 cup Kaizer American Pistachio Oil
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon chilli powder (adjust to taste)
- 1 small red onion, finely chopped
- 1 cucumber, diced
- 1 carrot, grated
- 1 small green chilli, finely chopped (optional)
- Juice of 1 lemon
- Salt to taste
- Handful of fresh coriander, chopped
- 1/4 cup toasted pistachios, chopped
Instructions
- Prepare the Spiced Oil: Heat Kaizer Pistachio Oil in a small pan over medium heat. Add the cumin seeds and mustard seeds. When they start to pop, reduce the heat and stir in the turmeric and chilli powder. Cook for about 30 seconds, then remove from heat. Let this spiced oil cool slightly.
- Mix the Salad: In a large bowl, combine the cooked chickpeas, red onion, cucumber, carrot, and green chilli.
- Dress the Salad: Pour the spiced pistachio oil over the chickpea mixture. Add lemon juice and salt to taste. Toss everything together until well coated.
- Garnish: Sprinkle chopped coriander and toasted pistachios over the top just before serving.
