Is coconut oil bad for you because of its high saturated fat content (90.4%)?
Coconut oil's saturated fat is largely lauric acid (47%), a medium-chain fatty acid that behaves differently in the body than the long-chain saturated fats found in most animal fats. That said, health authorities generally still recommend moderation, and coconut oil is best used as part of a varied diet rather than a primary cooking fat if you are managing cholesterol.
Why does this coconut oil turn solid or cloudy in cool weather?
This is completely natural and not a sign of spoilage. Virgin coconut oil solidifies below roughly 24-25°C due to its high saturated fat content, and turns clear and liquid again above that temperature. Simply place the bottle in warm water for a few minutes to liquefy it.
What is lauric acid and why does this oil contain so much of it?
Lauric acid is a medium-chain fatty acid that makes up nearly half (47%) of this oil's fatty acid profile, one of the richest natural sources of lauric acid available, alongside caprylic acid (7%), another medium-chain fat. This composition is a natural characteristic of coconut oil, not something added or enhanced.
Can I use this coconut oil for light sautéing if it has a low smoke point?
Yes, at low to medium-low heat, which is what "light sautéing" refers to. Its low smoke point means it is not suitable for deep frying, searing, or high-heat cooking, but gentle sautéing, baking, and finishing dishes stay well within its safe temperature range.
